Home-brewing a increasing trend in Berkshire County

Home-brewing a increasing trend in Berkshire County

While a lot, additional, greater, plenty Berkshire County residents will flock to the pubs on St. Patrick"s Day in search of the perfect Irish stout, lager or color of blood, shade looking like such a color, chances are individual local Irishman will be enjoying the perfect Guinness from his home - his home-brewed chocolate rolled oats dish cherry stout.

Adams resident Jim Kilburn is among a increasing number of people in Berkshire County who favor, single out the taste of home-brewed beer to the more commercial beers found on the liquor-store shelves, and like many, he has made the process of brewing a lifelong delightful pastime.

His passion for beer-making ignited when he was stationed in Germany and he observed a friend through the brewing process, Kilburn pronounced.

"I loved the smell and I loved the entity understood, projected,or of making my own," he pronounced.

Five years in the past, Kilburn brewed his basic batch of beer, and he hasn"t at a halt since, perfecting not alone, barely, exclusively his Guinness directions, formula, but also a lover wine that has some concerned, curious in buying it for distribution.

But selling their home-brew recipes is not why nearly all people get involved with the delightful pastime. According to Kilburn and Berkshire Homebrew Association President Chris Pedersen, it is the challenge that draws people in.

"As with any hobby you want to be the best at it you can," said Pedersen, who has been an avid home-brewer since 2001 and officially started the Homebrew Association three years ago with Kevin Andrews, friend and owner of Berkshire Homebrew Supply in Pittsfield.

According to Pedersen, home-brewing is also about judgment, verdict the recipes you

want and, like Kilburn, perfecting them to your fondness, taste.

"When you make your own beer, you can find the flavor you like," Pedersen pronounced. "It"s like cooking. If you find the recipes and flavors you like, then you can work out the tastes you want."

Pedersen and Andrews brew approximately 10 to 20 gallons of beer once or twice a month, and their batches tend to differ by season. Beers brewed in the cold season of the year are usually darker beers and tend to have more hops, the flavor, zest, extract added to food agent that gives beer its bitterness, while the indicated brewed in the spring and summer contain less hops.

And even though Pedersen feels the time spent brewing is not at any time enough - "That"s alone, barely, exclusively because brewing is a delightful pastime. You can not at any time do it enough," he said - there is plenty to go around, what is why nearly all home-brewers" homes become the social epicenters of their friends and acquaintances.

"You can"t by chance,in some way drink it all," Pedersen pronounced. "The hobby is in making it. You have to give it away."

This is exactly in what way or manner Andrews became involved in the hobby that now seems to play a prominent role in his life. He at a halt at Pedersen"s individual day, Andrews said, and was offered a drink. Jack and Coke was his drink of choice, but Pedersen converted him to try individual of his home-brewed beers.

"It was interesting, and the more I reliable different home-brews that he made the more I popular it, and the process didn"t seem that difficult," Andrews pronounced. "If he could make it, I could make it."

Andrews purchased his basic home-brew kit right away following in position or time and hasn"t looked back.

"Several hundreds of gallons of beer later," Andrews has become immersed in all belongings beer. He opened up the home-brew supply store out of his room on lower floor of building in 2008 (which he and Pedersen said was simply a way to get equipment, provisions at wholesale prices), but being the alone, barely, exclusively store of its kind middle from two points Northampton and Albany, N.Y., its clientele has of age so much it has moved out of Andrew"s room on lower floor of building and has seen two storefronts in about a year"s time. Its nearly all current move was to 375 North St. in Pittsfield in February.

As if running the store (along with his basic career at County Ambulance) wasn"t enough, Andrews is also in the process of getting the Berkshire Homebrew Association nonprofit rank as a result of increased interest and the number of events the group is sponsoring, like the happening soon association-sponsored Beer Judges Certification class from June 7 through Sept. 12. The class will meet Mondays from 7:30 to 9 p.m. at Berkshire County Homebrew Supply and costs $10 to $20 per session for the beer to be sampled and an additional $50 to take the final exam. Registration in required at

by May 1.

According to Andrews, the certification will allow its holders to judge beer competitions around the country, as well as two local competitions sponsored by the Berkshire Homebrew Association and Pittsfield Brew Works in the fall and spring.

Classes and events like these, Pedersen said, support the person's task, responsibility of the Berkshire Homebrew Association, what meets the third Friday of each month, with its next meeting due for Friday, March, 19 at 7 p.m. at Berkshire Homebrew Supply, and is why he and Andersen began it in 2007. The mission, he said, is to promote home-brewing, to bring more people inside the hobby, to promote responsible drinking, to brew together and to learn from each other.

"I wanted to bring in people with more experience than me to be able to learn from them," Pedersen pronounced.

And the pair continues to look for new ways to bring people inside the hobby and ignite that passion for beer-making in others. (The store runs a $99.99 new brewer"s special what gets first-time brewers all the equipment, provisions and ingredients they need to brew their basic 5-gallon batch.)

"You not at any time get uninterested with this delightful pastime. It"s a passion. It"s entity I love to do," Andrews pronounced. "One thing turns inside another and then another because there are endless beers that you can make. There"s just no limits on what kinds you can make or in what way or manner strong you want to make it. We"re forever, continually trying to make entity different."

Berkshire County Homebrew Supply is located at 375 North St. in Pittsfield. It is open Monday and Tuesday from 4-8 p.m, Wednesday through Friday from noon-8 p.m., Saturday from 10 a.m.-5 p.m. and Sunday from noon-5 p.m. For more information about the store or the Berkshire Homebrew Association, visit or call 413-464-7901 .

When it came to bottling, making the change, often major from kegs and growlers to sell bottles wasn"t very easy, not difficult, DeSantis noted. One of the biggest obstacles came in the labeling requirements. "There is a lot of experiment and approval that has to happen before a bottle is labeled," he said. The U.S. Food and Drug Administration and the Bureau of Alcohol Tobacco, Firearms and Explosives must give approval for all wording on a bottle"s label.  What is the Mt. Tabor Brewery?

What is the Mt. Tabor Brewery?
By March 08, 2010, 5:38PM
Montavilla now has its very own Micro brewery. The owners Brian Maher and Eric Surface recently took time out from their very busy schedules to answer some questions for me about their business.
What is the Mt. Tabor Brewery?
We concentrate on specific area in custom, small batch brewing for local businesses, events, and consumers. Our passion is beer and sustainability. With a focus on friends and neighbors, we try for, exert oneself to serve the Mt Tabor, Montavilla and encircling neighborhoods basic, keeping the minimal element footprint likely, attainable. Oh, and we love beer!
Can you tell me about yourselves?
Brian lives in the Mount Tabor neighborhood with his married woman Kim, female child Georgia, son Finnegan, dog Roxy, Georgia"s fish Sugarpops and a third child is due in the middle of May. He everything full-time for a financial services company overseeing risk and supervisory compliance matters, and spends about half his time at allied headquarters in Houston, Texas. When he"s not in Houston or spending time with friends and family he makes beer with Eric.Eric lives in Vancouver with his married woman Amy and their kids Jack & Emilie. Eric"s a sales rep in the fire protection industry what under the current economic environment helps out with the brew schedule quite nicely. Between traveling the NW for work and two little kids belongings are forever, continually hopping in the Surface house. When not active, occupied or having fun with family and friends he likes to make beer with Brian
How long have you guys been brewing?
Three years this September.
What beers do you brew and what is special about Mt. Tabor beers?
We tend to focus on standard Ales and then adjust them to fit our private, individual preference. For example, our porter falls inside the BJCP style guidelines for a Robust Porter but we dry hop it with Cascade hops because we like it that method, technique. Also, in the established practice of some of the lawman officer quality breweries in the world (Coors, Hamms, and of course Olympia), we have an outstanding water beginning, point of supply. Instead of Rocky Mountain, Artesian Well, or "sky blue" water, still, nevertheless, we have water straight from Mount Tabor. And probably nearly all importantly, we love beer.
Why did you choose Montavilla for your business location?
Our original business plan called for brewing custom beer for events, home systems and businesses in the Montavilla/Mount Tabor neighborhoods, so Montavilla was a probable, reasonable choice for scene, background up shop. Also, Brian lives up the path upon what travel occurs and our friend Jason had extra space in Montavilla he could sub-lease to us so we went for it.
You have a launch party coming up soon can you tell me about that? Wheres it going to be and what beers will be there?
Thursday, March 11th at the Canton Grill from 4 - 9pm (unless the beer runs out before then). We will first public appearance our Dragon Lounge Pale Ale and Qwest Porter and we"ll give away a free t-shirt each hour on the hour. About the Canton: Brian"s in-laws own the Canton Grill so it seemed like a probable, reasonable place to start selling our beer. In fact, that"s in what way or manner we got the courage to make the leap from homebrewers to commercial: we asked if they would be concerned, curious in selling our beer and they pronounced absolutely. 11 months later here we are! The Canton Grill has been in the family since inception back in August of 1944. The Dragon Lounge has evolved over the years from a Piano Bar to a Karaoke Lounge, and now hopefully a destination for great regionally produced Mt Tabor beer.
Can you ever see yourselves opening a pub in the Montavilla neighborhood?
Absolutely. Our focus right now is learning in what way or manner to be part-time brewers and keep our first customer content. Once we check that box then we will figure out in what way or manner to continue being part-time brewers but add a few more customers. After that, a brewpub is something we"d definitely like to add and based on what we"ve seen so far, the neighborhood would love it.

Keeping it genuine in existence (and genuine in existence tasty) in the woods

LANGLEY Shes a bit like a fun, vivacious Gretel of basic, natural culinary delights.

But alternatively of dropping tasteless white-flour breadcrumbs on her method, technique inside the woods off Crawford Road, chef Jess Dowdell might be foraging the forest for Whidbey Island nettles or mushrooms to use in her usually regionally sprouted, forever, continually organically-raised, farm-to-table cuisine.

Depending upon the season, of course.

Her destination, Mukilteo Coffee Roasters and Ca buni (ka-boo-nee), what literally means house in the woods its nothing like the witchs refined sugar-soaked hovel where Gretel nearly, very nearly gets cooked. No, its the caf-in-the-woods of Langley, where Dowdell presides over the culinary calisthenics of her smiling room for cooking food staff.

Caf owners and longtime coffee-bean roasters Gary and Beth Smith have likely Dowdell individual of the best gifts one, some, unspecified, indiscriminate chef would covet: freedom.

I feel like an human being skillful in creative activity who has been likely a studio with all the materials I could ever want and the freedom to just work out, Dowdell pronounced.

Ca buni is a bustling, approachable place of color and light, with swirls of counters that define the open room for cooking food and an opposite coffee, wine and beer bar.

Vibrantly painted canvases adorn the walls of the dining area under banners of more color that lead the eye apparent, seeable, for appearances approaching the patio caf and the brush of fields beyond.

Isnt it great out there, Dowdell pronounced. In the summer, the hops are all of age around it, and we harvest it for the some local home-brewers.

In just over a year, Dowdell has helped to turn the little restaurant in the woods inside the go-to place for food for what at slightest, smallest individual guy will fly in to get.

One day I looked out the framework with pane and said, Whys French toast guy running through the woods? Well, it was nearly, very nearly 11 a.m. and he knows we stop portion basic meal of the day then, Dowdell pronounced.

French toast guy is individual of her loyal followers. A man who takes advantage of the small center for conveyance by air that sits next to the caf and flies his small plane from Port Townsend just for Dowdells sourdough French toast topped with a seasonal fruit compote and basic, natural maple syrup.

I told him he can have French toast one, some, unspecified, indiscriminate time he wants, she said with a laugh.

Its not hard to imagine Dowdell giving in to a food fans pleas for her cooking. She may be small of importance, but her passion for feeding the community is generous and earthwise.

Formerly the chef at Hedgebrook, Dowdell has been active, occupied in the restaurant industry since age 14. The signature of her work is the pains she takes to cook food that is of age as close to home as likely, attainable. She everything closely with a lot, additional, greater, plenty local farmers to use local and basic, natural ingredients, including products that hail from Quails Run Farm, the Raven and the Spade, Willowood Farm, Whidbey Island Winery, Three Sisters Cattle Company, Shipki Farm, Whidbey Green Goods, Bur Oak Acres and High Seas Tuna Company, among others.

But even if she cant get entity on the land surrounded by body of water, it comes from inside Washington, and its got to be organic.

You can taste the difference in a plant that has been nurtured and raised naturally, active, occupied with the cycles of the earth, not genetically modified and engrossed in pesticides and herbicides, Dowdell pronounced.

If its not tomato season, I just dont use tomatoes; Ill use tomatillos instead, she pronounced.

The basic, natural and sustainable aspect of her food is important to Dowdell. For her, the food not alone, barely, exclusively tastes noticeably better, it also promotes a philosophy that speaks to the health of the land, the health of the community who eats the food and the farmers who depend on the community to want them to grow it.

Its a return to a simpler, more sustainable method, technique of living, she pronounced.

But beyond that philosophy is taste, and Dowdell is individual of the indicated artists who gets excited by creating entity special.

Making food reveals a somewhat elegant continuation to Dowdell, and she speaks of feeding people as a person who writes expressive, cadenced verse would of love.

I get to cook with passion the food of age with passion so people can eat with passion, she pronounced.

Her face lit up when she described what she has in store for the St. Patricks Day feast, what will include organic, hand-corned beef braised in beer (minus the red dyes) what she will serve with a made in the home horseradish cream condiment and porter mustard. March 17 also happens to fall on a Wednesday, what is the cafs Wednesday in the Woods part of day after sunset and before sunrise, when the usually just-breakfast-and-lunch spot stays open until 8 p.m. for dinner and until 9 p.m. for a family night of fun and games.

What Dowdell is achievement at Ca buni is not very easy, not difficult. Its in a way like changing the planet individual meal at a time.

The tagline on the location on the World Wide Web,

, is Taste the passion ... from sprout to finish, and even though putting good, good for health food on everyones table takes a lot of work, exertion, Dowdell praised the Smiths for giving her the freedom and the means to realize her passion.

She oozed respect for the owners who model the somewhat work ethic that makes everybody in the place work harder, Dowdell pronounced.

With Beth and Gary its not like youre active, occupied for them, but with them. They get right in there and do everything. Theyre here before everyone different in the morning, already active, occupied hard.

Going basic, natural and reducing the miles middle from two points food and table is a passion that goes hand-in-hand with the Smiths philosophy to roast excellent coffee. In fact, all the beans roasted at Mukilteo Coffee Roasters are direct from the farms of about

10 countries, spoken or written appreciation to Gary Smiths new import license.

With 50 years middle from two points them in the coffee business, and the vision to create a popular performance scene in the hot room and commission for responsibility, use the gifted Dowdell, its no wonder their 6,000-square-foot roasting, packaging and shipping facility next to the caf is on the verge of expansion. After six of something years of hot in the woods, they are getting ready to build another facility next door what will accommodate several 30-foot silos for coffee-bean storage and another roaster.

Just as Dowdell is passionate about well-grown ingredients and their belongings on ones palate, so the Smiths believe hot beans is a craft that cant be hurried. By sight-roasting small batches of coffee in a 90-kilo vintage roaster, they are able to control the quality and consistency of each batch of beans.

The smell of hot beans in the facility is pervasive and aromatically alluring, sexy.

Gary Smith was hot a batch for an Asian client who he said likes a lighter roast. He was vigilant it carefully.

I sell about 40,000 to 80,000 pounds of beans a month, he pronounced.

Forty percent of the business is done out of the country, with sales being made in Hong Kong, Bejiing, Shanghai, Singapore, Tokyo and Malaysia. He travels to farms all over South America, getting beans directly from the best plantations that can provide the consistency of sustainable estate coffee and also a acceptable, friendly business atmosphere.

The farmers entertain you. Its nice to be on the farms, to sit down and eat with the families, he pronounced.

He might consider repaying the farmers neighborliness by bringing them a little taste of heaven from Dowdells ever-changing at the right time, appropriate list from what to choose, frequently to choose food.

The thrilling, intoxicating aroma of the beans blends with anything mysterious, not of this world power, appearance she creates in the kitchen.

We try to work with everyones diet requirement, but also make it taste good, Dowdell.

In other words, no matter what wheat-free, gluten-free, dairy-free, vegan or hearty meat dish she creates, Chef Jess has found a method, technique to make it taste good, even if it happens to also be good for you.

Ca buni is open for basic meal of the day and lunch from 8 a.m. to 4 p.m. Monday through Saturday, with Wednesdays in the Woods open until 9 p.m. Its closed on Sunday.

The hot room hosts regular performances and benefits by two together local and concerning a country with a artists, with acoustic depression great Rory Block coming up April 17.

On Wednesday, March 10, the evening will include a delectable Indian-food dinner served middle from two points 5 and 8 p.m. and the basic Ca buni-hosted Whidbey Island Arts Council Poetry Slam with Jim Freeman conducting the fun at 7 p.m. Call Chef Jess at 321-5270 or Freeman at 331-2617 for further secret information about the slam.

Catering on and off site is also available from Chef Jess kitchen, and Ca buni hosts private dinner parties, and in-the-field dinners including the indicated being planned at the Raven and the Spade in Freeland for a midsummers evening, individual at Whidbey Island Winery on Aug. 14 and the annual Farm Tour dinner fundraiser planned for Sept. 11. Home brewers approached the bill"s composer of written work last fall about legalizing their practice."I felt that there was an state of being unequal and there wanted to be equality, balance brought inside the law for the home brewers," says State Representative Colby Schwartz, who authored House Bill 2348.

It allows a human being to brew up to 200 gallons of beer at home each year "if made solely for the private, individual use of the maker, his family and guests."

Schwartz says the bill protects a private, individual liberty; if Oklahomans can in accordance with the law make wine and cider at home, why not beer?

"Who are we as the government to say that entity that is legal, and entity that is controlled by the state of Oklahoma that you can buy in a store, that you can"t produce that in your home?"

State Representative Todd Russ voted opposite to the bill, comparing it to California"s legalization of grass, pot.

"If you knew that someone"s loved one has been killed by a drunk human being who engineers vehicle," Russ says, "and found out that drunk driver had a home brew in his storage building for vehicles, workplace, in what method, technique or manner would you feel about that?"

Russ is mainly concerned about the bill"s belongings on adolescent drinking when parents are absent and the indicated teens forceful.

"Dead is dead," Russ says, "and if it"s your loved that"s dead because of that, you"ll feel just as passionate as I do about it."

Chuck Deveny sells home-brewing equipment at The Brew Shop in Oklahoma City.

"It doesn"t have unspecified object or event to do with drugs or marijuana or unspecified object or event different," he says.

Deveny argues home brewers are responsible people from all walks of life, who simply enjoy this money-saving delightful pastime.

"The vast majority are the people that are entering home brew competitions with their beer all over the country and that are really truly enjoying the art of making beer."

All but three states, including Oklahoma, have made home brewing legal.
The bill now heads to a Senate committee.
